Links I've Liked 6/21 - 6/25

- I made this fantastic noodle-less lasagna yesterday using eggplant from my neighbor. The only thing I had to get from the store was ricotta (whole milk only, please). I had home-canned grass-fed ground beef and crushed tomatoes and in my pantry had tomato paste, eggs, mozzarella, parmesan and vodka. I used fresh mushrooms, spinach, onions and garlic and didn’t need any olive oil or extra water. It turned out amazingly well, I didn’t miss the noodles at all! I’ve not been a big fan of eggplant in the past, but this is a PERFECT use for it.

- A friend of mine recommended this Home Made cookie stamp for cookies and soap. It’s terribly cute, but I’m not likely to buy it for myself.

- This is a gorgeous chicken coop!

- I came across a fellow blogger’s 20 things I Wish I’d Known At 20. I thought this was an interesting list, I’m sure there would be some things I would say to myself at 20, but to be honest all my mistakes have made me the person that I am today and I wouldn’t want to change any of those experiences. I love my life as it is now and I wouldn’t change it for anything.

- This moss bath math is the coolest thing I’ve seen all week. I’m not sure how I wouldn’t kill it, or smoosh it under your feet, but the concept is completely amazing.

- The hidden beauty in alcoholic drinks This looks positively fantastic, looking at cocktails under a microscope. I have no idea what I’m looking at, but it sure is pretty.

- Lemon ricotta cookies with a lemon glaze I made these for a friend of mine’s birthday. The cookies themselves are a little bland, but once you add the glaze they’re pretty good. I used whole wheat pastry flour, ghee, cane sugar and lemon juice and zest from lemons I had kept from when they were in season.

- I also made these lemon shortbread cookies for him. It was a whole themed birthday…that is: You’re 40! Way to make lemonade out of your lemons! I made the two kinds of lemon cookies, a pitcher of lemonade and one of the Glass Dharma glass drinking straws and a bamboo case. I thought I was very clever.

- A female condom with teeth – I include this on the list because I’m glad that someone has taken the time to think about this and help create to help a bad situation. I don’t like that it’s needed, but I like how the human spirit cannot be kept down.

- Serving others/foodie bubble/those who need it most – an article about healthy food, serving others and feeling bad about how the people who need the good, healthy food the most are the ones without access or who cannot afford it. It breaks my heart, I know what she’s talking about.

- An article about how the new USDA dietary guidelines are a bunch of crap

- Awesome paper lanterns
